With a B.A. in Gastronomy from Claustro de Sor Juana University in Mexico City, completed in 2001 and several professional restaurant and bar management courses under my belt, always have had a clear passion for quality food all my life.
As Executive Chef at Lupita from 2011 to 2016, I managed the daily operations in the kitchen, was responsible for the food preparation, supplier directory and ordering as well as playing a creative part in the development of the menus, ensuring the focus was always on the authenticity of the food, using fresh and seasonal produce that has been sourced locally whenever possible and importing authentic ingredients to promote the trade between Mexico and the UK.
I’ve worked in many of London’s well-known restaurants such as Taquería and Mercado Cantina as well as some popular high street chains including Wahaca and Pizza Express.
After spending time in Italy between 2002 and 2005 as a Chef Consultant and Head Chef on Mexican restaurants, my professional path lead me to focus on authentic Mexican dining offer.
I am a proud ambassador of Mexican Gastronomy declared by the UNESCO as heritage of humanity, reason why, I decided to share my expertise and knowledge offering Consultancy on Mexican Cuisine for all interested on having an authentic offer on the competitive catering industry in UK and around the world.
I was Born and Bred in Mexico City, Mexican food runs in my blood, it is my heritage and through my work I honour my roots.
Mexican Gastronomy is fresh, fragrant and fun, you have to be passionate respect the ingredients, the culture, the cooking and the taste.
My commitment is to spread knowledge of an ancient cuisine through my cooking.
